With its mountain vineyards rising as high as 3000 ft., Lake County is renowned for producing full-bodied, beautifully balanced Cabernets. The Dancing Crow Cabernet Sauvignon shows aromas of cassis and mocha, followed by luscious flavors of ripe cherry, blueberry and dark chocolate.
This wine consists of fruit from Lake County’s Red Hills and Big Valley AVAs, both of which are known for creating beautifully, bold, yet balanced red wines. Also included is 15% Mendocino Cabernet, to take advantage of the effects from the cooler climate, by softening the firm tannins of Lake County. The addition of 15% Red Hills Malbec enhanced the concentration of the wine and imparted brambly, blackberry flavors. The 2018 vintage’s longer hangtime was particularly advantageous, with the fruit showing excellent richness, intensity and structure. The winemaking for this vintage focused on highlighting the deeper, darker notes on the Red Hills fruit while adding a smooth, velvety finish with the addition of Mendocino Cabernet. The final blend includes 85% Cabernet Sauvignon and 15% Malbec (50% Red Hills Cabernet, 15% Mendocino Cabernet, 20% Big Valley Cabernet and 15% Red Hills Malbec).
